Since I hadn’t been home in so long, I wanted to get some new music onto the computer in my room and for my iPod…nowhere near as easy as it sounds! It took me forever; each step along the way was an ordeal: between getting the computer to turn on (its plug and battery no longer work), getting an internet connection, downloading, syncing, and uploading to the cloud, it took over 3 hours! Needless to say, I was mentally exhausted (new songs were totally worth it, but it was still brutal).
My plans for dinner were annihilated; the oven was cleaning itself so I couldn’t roast the squash. So I went to plan B and made some enchiladas stuffed with a spicy guacamole and topped with homemade not-fried, refried beans. I served it alongside some sweet potatoes (surprisingly delicious from the microwave). We were so hungry, and it was gone in seconds! Then we chowed down on a super-sweet pineapple.
Then it was off to Wal-Mart. This was my first time ever going out on Thanksgiving like this (we don’t do the whole Black Friday thing either). It was a zoo, but nowhere near as bad as we were expecting. We got what we came for, and I found some really cheap workout gear.
Today
This morning, once again, I was up before everyone else. I had my some overnight oats for breakfast, and worked a little on the cookbooks. After about an hour, I did an hour long weights workout for my chest, shoulders, triceps, and biceps. It started with a video (I forgot how hard it was) and then I finished up with a final few moves…I had increased the weight from the last time, and I was really feeling the burn today.
After my workout and shower, we headed out to Costco for some shopping for the week, my brother to bring to college, and for my dorm as well; we also wanted to get their free yearly cookbook, so we went soon after they opened. We found some running gear for me also (base layers in cute colors).
I was so hungry when we got back, so after unloading and putting things away, I started on lunch.
I halved an avocado, removed a good portion of the flesh, cracked an egg into the half with the skin, and steamed it until the egg was cooked completely. I topped this with some crushed tomatoes. This was the first time I have had cooked avocado; I definitely like it raw better, but this was still good.
I also roasted the delicata squash and topped it with cinnamon.
We dipped it additional crushed tomatoes…very tasty!
Then I packed up my suitcase with all the goodies to bring back to college. All I can say is it is a good thing that we drive back–it is stuffed and heavy! Good thing I also was reasonable with the amount of clothing I brought.
I am hoping to get an assignment done within the next hour, and then start decorating for Christmas! So exciting: I love seeing all the decorations up.
