Meatless Monday Superfood Chili


With the temperatures dropping as we near the winter season, some nights all I want to do is enjoy a nice warm bowl of comfort food (healthy comfort food that is).  This hearty chili will warm you up without filling you out.  This recipe needs only 1 pot so there is no excuse not to make it for #meatlessmonday.  It makes 6 generous (read: HUGE) portions at only 400 calories each.

 

Superfood Chili

Serves 6  (400 calories per serving)

Ingredients:

  • 1 lb. dry kidney beans (soaked overnight, rinsed)
  • 1 large bunch of kale, chopped
  • 2 tomatoes, chopped
  • 1 serrano, seeded, deveined, diced
  • 4 garlic cloves, minced
  • 1 white onion, chopped
  • 2 bell peppers, seeded, chopped
  • 1 6oz. can tomato paste
  • 1 lb. white button mushrooms, sliced
  • 1 6oz. can black olives, rough chopped
  • 12 oz. frozen, shelled edamame
  • 1 Tbsp. oregano
  • 1 Tbsp. cumin
  • 1/4 tsp. red pepper flakes
  • 1 bay leaf
  • Salt and Pepper, to taste

Directions:

  1. Combine the beans with the bay leaf and enough water to cover them by 2 inches in a large pot.
  2. Bring to a boil, cover, simmer over low heat for 2 hours, or until tender.
  3. Add all remaining ingredients except the edamame and olives.
  4. Cook covered for another 30 minutes.
  5. Stir in the olives and edamame, and cook until warmed throughout, about 1o minutes.
  6. Serve yourself a bowl and enjoy the healthy comforting goodness!
